This recipe is inspired by the unforgettable Avocado Toast from Egg Harbor Café in Chicago. When I worked there, my office was just across the street from the café, and I couldn’t resist stopping by for breakfast to enjoy their famous avocado toast. It was so delicious that I felt compelled to recreate it at home but with my own twist.
This delicious toast is very dear to my heart as my late daughter Jeanelle loved it, and I used to make it for her often for breakfast. This is one of her favorite breakfast meals, and as you all know, this website was created when Jeanelle was born, so everything I have written here is dedicated to her. Back then, I thought I should write all my recipes so that she could have all her favorite foods in one place and easily make them when she grew up.
