Ingredients:

  • 2 cups 2 String Beans, cut into 2-3 inch pieces

  • 6 cloves 6 Garlic, Minced

  • 1 piece 1 Medium Yellow Onion, Chopped

  • 200 g 200 Chicken breast or thigh, Thinly sliced

  • 3 tbsp 3 Soy Sauce

  • 2 tbsp 2 White Vinegar

  • 1 cup 1 Water, adjust depending on your preferred sauce consistency

  • 1 tbsp 1 Cooking Oil

  • 1 tsp 1 Ground black pepper

  • pinch Salt

  • pinch MSG

  • 1 tsp 1 Sugar

Instructions:

  • Sauté Aromatics: Heat the cooking oil in a pan over medium heat. Add minced garlic and chopped onion, sautéing until fragrant and translucent this creates a flavorful base for the dish.
  • Cook the Chicken: Add the thinly sliced chicken and stir-fry until it turns white and loses its pink color. For deeper flavor, continue cooking until lightly browned.
  • Add String Beans: Toss in the string beans and stir-fry for about 2 minutes, just enough to brighten their color and begin tenderizing.
  • Simmer with Sauce: Pour in the soy sauce, vinegar, and water. Let the mixture simmer gently for 3 to 5 minutes, until the beans are crisp-tender and the chicken is thoroughly cooked.
  • Season to Balance: Finish by adding ground black pepper and sugar to taste. Adjust seasoning for a balanced blend of savory, tangy, and subtly sweet notes.
  • Serve and Enjoy: Serve hot over steamed rice for a comforting and satisfying meal.

Equipment:

  • Cutting Board
  • Knife
  • Measuring cups u0026amp; spoons
  • Pan or Wok
  • Cooking Spatula

Notes:

  • Choose the Right Chicken: While both breast and thigh work, thigh meat adds a richer flavor and stays juicier in the sauce.
  • Balancing the Vinegar: For a smoother, well-rounded taste, let the vinegar simmer for a few minutes without stirring. This allows the acidity to mellow.
  • Soy Sauce Matters: Use Filipino-style soy sauce (like Silver Swan or Datu Puti) for an authentic flavor. Dark soy sauce can work but will deepen the color and taste.
  • Customize the Sauce: If you prefer a thicker, richer sauce, reduce the water or let the dish simmer longer to concentrate the flavors.
  • MSG Alternative: If you’d rather skip MSG, a little chicken bouillon powder or more soy sauce can help enhance umami.
  • Add More Texture: If you like variation, toss in sliced mushrooms, tofu, or bell peppers for a heartier dish.
  • Perfect Pairing: Serve String Beans Adobo with warm, fluffy rice. It soaks up the savory sauce perfectly!
