Ingredients:

  • For The Cookies:
  • 1 stick 1 Unsalted Butter

  • 1 tsp 1 Baking Powder

  • 1 tsp 1 Vanilla Extract

  • 2 1/2 cups 2 1/2 All Purposed-Flour

  • 1/4 tsp 1/4 Salt

  • For Lemon Curd:
  • 1/2 cup 1/2 Fresh Lemon Juice

  • Zest Of Lemon

  • 1/2 cup 1/2 Ganulated Sugar

  • 4 pieces 4 Egg Yolks

  • 6 tbsp 6 Unsalted Butter

  • For Garnish:
  • Powdered Sugar

Instructions:

  • Make the Lemon Filling In a small pot, mix lemon juice, lemon peel, sugar, and egg yolks. Cook over medium heat and keep whisking until it gets thick about 5–7 minutes. Take it off the heat, stir in butter, then chill it in the fridge with plastic wrap touching the top.
  • Make the Cookie Dough Beat soft butter and sugar until fluffy. Add vanilla extract and in another bowl, stir together flour, salt, and baking powder. Slowly add dry mix to the butter mix until you get dough. Chill for 30 minutes.
  • Shape and Bake Heat oven to 350°F (175°C). Roll dough into small balls and place on a lined baking sheet. Press your thumb or a spoon into each to make a little dip. Bake 10–12 minutes, then let them cool.
  • Add Lemon and Serve Spoon a little lemon filling into each cookie and sprinkle with powdered sugar.
