In my option, it is very straightforward and economical since it only consists of Asian Eggplant, Eggs, salt and pepper, and walla; you have this delicious Filipino dish.

When I first served this dish to my American husband, he can’t believe that he is eating an eggplant. He used to work in a restaurant, and he once said that Eggplant was one of his least favorite meals to cook and eat. However, after trying this dish, it changed his presumption that all Eggplant taste the same, like bitter melon. It also changed his taste buds, and this is now his new favorite quick meal.

I remember growing up; I used to ask my mom to fry my tortang talong longer.  You probably are curious why? Well, my simple answer is that I like my tortang talong charred and crispy, and it is good to eat this dish paired with banana ketchup and steamed rice. The taste is so satisfying and pleasant to your mouth.
